Company

The company is located in the hills of Spello, which are part of the Assisi Spoleto olive grove, a candidate for UNESCO recognition as a cultural asset of humanity.
In this environment of rare beauty and highly suited to the cultivation of olive trees, grandfather Giovino Filippucci founded the farm in the 1950s, which was then run with great passion by his father Siro, from which Podere Filippucci di Sandro was born and Luciana.
THE OLIVES
The olive groves are made up of plants of the main olive variety of Umbria: the Moraiolo. This variety, in the environmental conditions that characterize the cultivation area, and with the careful and rational cultivation care ensured by the company, gives an oil of excellent sensorial and nutritional quality: optimal composition in fatty acids and high content in antioxidant substances which, as known, they have positive effects on health, contributing to the reduction of aging processes and important diseases, such as cardio-vascular (reduces the content of bad cholesterol in the blood) and cancer.
The olive groves are cultivated with great care and respect for the environment, applying integrated cultivation techniques to ensure the production of healthy and excellent quality olives. The harvest is done at the right degree of ripeness (when the coloring is only superficial and not yet complete), to guarantee the production of an oil that has the best sensory (fruity, bitter and spicy) and nutritional characteristics. The bitterness and spiciness is given by the phenolic substances, which represent the most important component of the antioxidant substances contained in the extra virgin olive oil.

THE VINEYARD

The vineyard extends over 8 hectares in Spello in the DOC ASSISI area. The main variety present is San Giovese, a vine with medium-sized light green leaves and medium-large ovoid berries of regular shape, while the skin is purplish tending to black, planted on clayey-calcareous soil. These characteristics give the wine a warm ruby ​​red colour, fruity and tannic on the palate. The white wines, on the other hand, are made up of a blend of Grechetto and Trebbiano. These grapes give the wine a golden color with delicate fruity aromas.

The harvest takes place by hand, without the aid of mechanical means, where it is up to the harvesters to be careful in choosing and delicacy in placing the grapes in the appropriate wooden boxes.
